Cooking Daikon ( Japanese / Chinese White Radish )

Daikon (大根 in Japanese) is a sister of Radish (yes, that red small one) or Swede and  hey are all in the same  Brassicaceae  family, hence having the same four-petals flower like Rape flower (but Daikon’s flower is in pale violet to white = in fact pretty pretty, innocent looked flower  🙂 )

Despite it is one of the most common root vegetable in Japan (also in China = Japan is exporting its shredded and dried products to China hundreds of thousands of tons every year) when I came to England, it was not in greengrocer’s  (yet, French calls it as Molly and eat a lots though, theirs having black skin and as big as Japanese one  (up to 4″ or 10 cm diameter = hence, it resembles girl’s leg with black tights = so, to see it in the piled-up mountain in St’ Michelle market in Paris, it looked very sexy  😀 )

(In Japan, call a girl “Daikon ashi” (Daikon leg) is a worst insult 😉 )

Even though Daikon is so popular and ubiquitous though, you may not see them in a restaurant menu —– situation looked the same in French or Chinese, I don’t remember I ever seen this vegetable in their menu, except a very rustic or family kitchen style restaurant, otherwise as a small side-dish to drink Sake = such as I describe hereafter.  🙂

( If you ever seen disc-shaped yellow pickles = Takuan = it is one of the pickled style Daikon though, it may not in an expensive Japanese restaurant  🙂 )

—– So, how Japanese is cooking this vegetable in their kitchen ? 

Daikon is very easy to cook vegetable as its own or with another materials —– It can be eaten  even  raw = grated ( the source to dip Tempra) or finely cut into thread (comes with Sashimi) and often boiled with Octopus or Squid because the Daikon is having a Digestive Enzyme which soften Octopus, on top of many nutrition and vitamins   🙂 

The photo above is  Furo-fuki Daikon ( 風呂吹大根 ) = Daikon was boiled with dashi, that’s all !

 * Boil the Dashi = as the powder, or in a small packet,  or use Dashi Kombu (Kelp sea weed) and a bit of Salt.

* Then put cut Daikon and boil — may be 60 min or so, until it was cooked soft (— it would be disintegrated if it was boiled too long —– still, it will make a nice soup.   🙂  )

Even simpler is Dengaku ( 田楽) = just boil Daikon in a plain water until it was cooked soft.  

* And eat it with a Miso based source  = Miso with small amount of Vinegar and a bit of Sugar, + small amount of Mirin (Japanese Cooking Sake or a bit of wine, White Rum can be used instead )

* For additional flavor — I add few drop of West-Indian Hot-chilly Source, or Wasabi,  Mustard. — When I mixed with Thai Tom-yam-Ku paste = it wasn’t too bad —– any variation you can try and enjoy the taste.  ( If it became too runny with vinegar etc, just add more Miso.   🙂  )

(For Dengaku, you can put many different materials too, such as Carrot, Cauliflower, Celery even Potato. — Japanese use Konnyaku (it’s a funny staff /  Mannan product)  as well. ) —– from here, another popular Japanese cooking called “Oden” is only a step away.  Basically Oden is a cooking of the chopped Daikon and various fish cakes boiled together and pick up of those you like from the pan to your own small dish and eat. (normally with mustard = why mustard is, = since Daikon and Mustard belongs to the same botanical family, their taste mix well, = same as that, Tomato based cooking will mix well with chilli pepper, since they are in the same family) 

—– Now you have seen the key of the Daikon cooking = main seasoning in Furofuki Daikon was in its Dashi, but the Dengaku, it was in the Source.   Still in both cooking, the dominant taste is Daikon itself.

When an Italian guy who seemed to have very good taste bud, first ever eat Daikon and he was very impressed and asked me how to make it.  —– And he was even surprised, why Italian doesn’t have such cooking, despite it is very popular in France. 

( Only a small trouble with eating Daikon is,  it could make you to produce strongest mankind ever know kind of fart, yet still, it was known to be not poisonous = hence, it makes short of health warning.   😀  )

—– Not because of its humble, Minimalistic Zen approach, but simply, it’s so tasty  = So, this is my Festive time eating.  (on top of Temaki-Sushi.   😀  )

It’s been a quite long time I haven’t visited WordPress, I got some very beautiful photos of azalea flowers in my hometown in May last year, but haven’t got a chance to post them at my blog yet.

 

We cook White Radish(Bai Luo Bo- 白萝卜) at three methods:

 

1) Sliced it in little strips or little bits,  and then stir and cook with pork.

2) Sliced it in large unit, cook and boil with pig’s bone, pettitoes, chicken or duck meat

(boil it about half or one hour).

3) Sliced it in large strips, boil with pig lung (boil it about 1 hour).

Especially during the winter, cook the white radish with pig lung and eat them, it can help people to keep their lungs in a good condition.

SKI

Ski — a news from my friends in Japan =  I received an Email from a friend in Japan who had

first mountain ski (off-piste) in this season.  My friend,  Makoto is one of the younger member

of the Alpine Club of our Uni’ = some years younger than me though,   he is now over 60.

Still,  he has been skiing almost every week on the last winter.

When I was in my Uni’  I was thinking to become a Ski Photographer = I wasn’t too bad in Skiing

as I could ski while holding camera and shooting though, one day, on a very steep slope with ice

where I needed side-slip, then, another photographer was skiing down straight while holding

16 mm cine camera between his knee !    A practicing race skier there said  “He is our club’s

old boy” —–I instantly realized that there is no competition = I gave-up my idea.   

(Later I learned,  Ski photographer doesn’t need to ski like a slalom racer = Go to the best spot on

the course on FOOT and capture the action of each Skier.  Otherwise visiting good ski resort and

making vivid report.   The matter is not a ski skill or top-notch photography but a good relation

with the editor.  In case of advertising photo = it’s all set-up.   😀   😀 )

What I found interesting in Makoto’s latest equipment was,  the advancement of the technology

and the material.  (40 years ago, most of the ski was made by  wood and ski-boots was leather  🙂 )

When I try to re-use broken metal ski, I was pretty impressed by its construction = how 

different materials were stuck together = the technology in Glue = such as non-sticking Teflon

was stacked to the bottom of ski and the artificial rubber (Neoprene) was sandwiched between

High-tensile aluminum — yet, under extreme cold and extreme rough handling (footing ?) and

constant vibration and the bending strain = still, ski doesn’t disintegrate even without having 

rivets, screws or welding to bind them together  !

And the plastic boots (Makoto is using the boots which was designed for walking as well ) is not

a simple PVC = very complexed compounds of plastic = solid enough to firmly attach to the

bindings and soft enough for walking =  above all,  consistent in very wide range of temperature !

(most of plastic become brittle and crack under cold temperature)  

And his boots has Accordion structure !  (See the photo) —– How fascinating  🙂

This year, japan is having quite heavy snow ( Do you know,  their snow is as heavy as 7 m deep,

not just in the mountain area but many Cities and Towns in north-western side of Japan). 

The mountain where Makoto went was only  2 hours drive north of Tokyo. 

Then,  after climbing and  ski down from 2,000 m high top,  having had relaxing hot spring bath,

before drive back to Tokyo —— all done in a day, 14 hours exact  with little expense (They brought

their lunch-box made by their wives )  !  = What an active, healthy life.

—–  As a man,  stack in London,  I really envy them  😀

Stollen ( German Fruits Cake for Xmas )

On my daily life, there are quite few things missing —– on the shopping front, it is far easier

to count what I buy rather than listing up what I don’t buy = such as other than fresh vegetables and

the fruits, a sort of sweets or confectionery is completely missing = simply because I’m buying

essentials which I desperately need ! = if I don’t eat I may die = So that, I have to eat = hence, I buy

the food staffs, but in the cheapest way = fresh raw material = never buy processed food, let

alone junk-food or that kind, bottled drink, any alcohol, which we don’t need for our survival 😀

Don’t get me wrong, I’m not following ANY idea of “Healthy diet” or Religious restriction what so ever

but simply I’m living the life of poor-man. Cooking out of fresh materials is the cheapest way to eat.

This mind-set, “poor-man” (in Buddhist’s term, Bhikku = Beggar)  seemed to have originated from

my family = Zen priest’s and the life in the mountain = NO waste of food, food is to survive.

—– And in the same context, no waste of anything (since, I’m not printing a money or ever

produced even a single grain of rice) so to repair and recycle what so ever it was possible, is the norm.

In the same way, wear the clothes is for its essential function, not for fashion or vanity = hence,

as long as it is wearable (with stitching repair etc), no need to buy another one.

—– So, I’m still using my heavy-duty jacket I bought in Japan 40 years ago 🙂 — though, it seems,

it has gone too far hence, some body told me “If you like to come, buy decent clothes and wear a tie”

= so, I needed to buy a trouser and jacket last week (last time I did shopping for clothe (other than

underwear and socks) was two years ago 😀 )

Therefore, in my shopping, I’m going through a forests of foods and goods like a remote land-scape.

Still, it is not a kind of fixed mind or prohibition, the mind recognizes those item which I don’t need is

not there —– sweets, confectionery or the fashion display doesn’t take any attention = or they are

almost NOT exists. (I might be an enemy of the super-market —– or for them, £10 par week

kind of person has no statistical significance :-D) —– THOUGH, once in a year, I’m making

an exception for a German cake Stollen which is only sold in the Xmas time.

Stollen is a German equivalent of Xmas pudding but not as heavy as Xmas pudding with Rum or

Brandy, still it is a kind of festive fruits cake.

—– I’m not an expert of cake making, let alone Stollen. I only know this, in the past 7~8 years since

I saw a woman buying this from the Lidl saying “This Stollen is our traditional Xmas cake”

As the woman pronounced “Sh-tollen” I noticed she is a German. (And Lidl shop was originated

from Germany)

—– So, as a cultural interest, I bought one and realized this must be the symbol of their winter life.

= In the Autumn, people, kids goes woods and gather edible small fruits, Blue-berry

kind and Walnuts, Pine-nuts etc. And use those harvested and dried fruits to make a

cake for winter festive season. (Though, today’s Stollen was made with imported Raison, Almond

/ Marzipan etc —– still showing and maintaining their traditional folk culture 🙂 )

I like the life rooted on the Earth and live accordingly to the season = life of

the moment to moment.

Pick the Berry in a late Summer, preparing for the coming Winter — and eat the gift of the Nature

in the Festive time remembering the Sun in the Past Summer = To repeat this, ten or so times,

the kids become good grown-ups and start to have their own family.

—– or, to repeat 60~80 times is what our LIFE is = smell of sun drenched bush, or cool air

of forest’s floor —– the memory of brother or sister, friends etc etc = and the cycle of the LIFE

= therefore, as I bought the same Stollen again, it’s mean yet another year has past.

I wouldn’t say, either congratulation or sorry = it’s just another year  😀

(And, I wouldn’t imply the life has an equivalent value of 80 Stollen  😀 😀 )

And the Japan Post started to sell their Official New Year’s Card / 年賀状(Nenga-jo) with

lottery /お歳玉 (Otoshi-dama) = (It’s the institutionalized Japanese annual custom =

never mind a Christmas Card, but without having the New Year’s Cards / 年賀状

Japanese couldn’t have a New Year. (Well, the Wise-man in Japan Post said so) 😀

N’s Sports Party at Abbey

Newly wed N is a web designer and keen cyclist, traveler and doing Kinetic-sculpture as well. (hence we met many years ago on an art event).   In fact, he had Stag-do in the south coast, doing canoeing etc with his old baddies weeks ago as well.

So, when I arrived to the Abbey, I was greeted by his fancy dancing.    😀

As I was warned, this party was not a kind of eat, drink and catch-up chattering but quite physical.     😀

I don’t know the name of this game, still, there is an almost identical game in Japan but played only by the kids.

Sports party though, it’s still a family occasion, N’s mum and dad and of cause his wife and her sister D were all there enjoying the company.

This game (photo above) said to be called “Sheep stack in the mud ” = may be Japanese equivalent of Oni-gokko”  🙂

On such sporting occasion, photographer shouldn’t be just an observer = gone to more pro-active. (or a bit naughty ? ! = to inflate size D to FF) — no, not me, lens did  😀

Then egg on the spoon race. Though, some confusion of the rules —– spoon on a hand or on the mouth ?

And the Prize giving ceremony = of Gold, Silver or Copper.    😀 

In the same time, yet another activity which was a bit more intellectual research and the interview was carried out by D as she was a student of London Uni’

Yet more Spoon race.  😀

And more common ball game. 

So, the party went on till sunset.  It was a fantastic day and a nice quiet evening.

Olympic Opening

The evening before, I asked my neighbor “ Are you going to watch Olympic Opening ?”

as he got fancy satellite receiver and big screen TV.  He said, “may be, but shall we go to a pub to

see it in their big screen”. —– So, we went to a pub round the corner.

This is the first time to go into this pub since I moved to this area 11 years ago.

(As I don’t drink alcohol I rarely go to a pub, except a meeting took place in a pub).

The TV was there though, nobody was watching.  The next day’s news said nearly 27 million

people did watch the Opening program = out of 65 million in the UK = it was far less

than half of the population ! = this is the first fraud, the government and the media

have to juggle 😀  (Instead to say 40%,  27 million sound a lot to the most of the people’s brain)

So-called Democracy is based on the support of the majority = popular support

= populism.  While forcing austere measure to the people, still spending £9.5 billion =

In order to justify its spending,  government had to create an impression

“ Everybody excited and support the Olympic”.

In this populism concept, this Olympic Opening must be the most Politically

loaded and choreographed event in the recent history. (Of cause I don’t know all

the details of another Opening of such as Beijing, Soul, etc —– yet still, most others seemed

to demonstrates the power of the Nation = Government and Military. (such as exactly

synchronized mass demonstration of Martial-art play, performed by the soldiers,

and the mass game of the top beauties gathered from all over the country, kind).

Instead, London Olympic Opening avoided to go this kind, while pretending

GREEN and Politically Correct. = Hence, the people appeared there got to be looks like

just a man or girl next-door, and especially from ethnic minority.

In this Political Correctness, there was no single Hero to light-up the

Olympic-Flame, but by the group of athletes. —– And the Flame-burner, its

head was a Copper piece brought by each country. (A girl or boy walking with Flag-bearer was

carrying looks like urinal shaped metal piece = it was for this purpose  😀 )

(In certain extent, I think it was a brilliant idea ! = Forget PC blah blah, here 😀 )

And draw the Queen out of her holy residents and made her jump from a chopper

(in fact a stunt-man with Queen’s costume and her mask over his face, doubled her) must be

an Extreme-left-wing  Anarchist’s dream.

Still, it had made only eye-catching stories of the tabloid paper = not fool the population for whole. 

= The unsold empty seats are the evidence. (May needs the same measure of Beijing Olympic to

mobilize local school kids to fill the seats to COVER-UP).

never touched. = Land owing system, hence the concentration of the wealth.

Let Tory and Labor fight each other, is the traditional [Divide and Rule] tactics

of the Empire.  Top of the Government = Prime Minister is just a hired manager of the estate

= let him manage the people to keep status-quo in good order, while work hard to produce

enough revenue to run the estate.

If any left-wing dissident became a prominent figure, make him (or her) Sir

(like Bono 😀 ) and integrate into the Imperial SYSTEM.

(like the former director of Liberty, John Wadam is now a part of the establishment, and the

another member of Liberty, Shamira Chakrabarty was carrying the Olympic-flag.   😀

= Honor cost nothing still, the most powerful tool to coax the noisy dissident).

Organizer might have thought that the approach of Politically correct Populism can give an

illusion of Democracy though, in contrary, it highlighted the deception more. = This irony is

exposed also in the history of the Industrial Revolution = “Where the industry started in this

Tim Bernard-Lee though, “Where the Industry using WWW, such as Google has gone to ?”

ZEN in Making

Well, the title Zen in Making is the double

meaning.   🙂

Zen is not coming but you need to make it.

So, I’m making it or doing it by Making, literally.

The people who was attracted to the Buddhism with its

mythical, hence intellectual connotations, it might be a

phenomenon, utterly out of expectation though, this is

what Lord Buddha taught as to gain the state of

the Mushin (Mind of No-Mind, since No-Self,

= since No Atman = Perpetual Soul kind what Brahmanism taught,never exists)

—– it’s mean the widely believed myth of Reincarnation is the later invention of the

professional monk who needed to enslave the followers to keep donating the money to them

(otherwise you will go to the hell and reincarnates into a beasts) —– though, what

Lord Buddha taught was “The death is THE Nirvana = No more suffering there”

(Since, it was called Nirvana = fire just goes off = no glorious departure to the heaven kind 🙂

—– But, if everybody can get Nirvana naturally, no need to pay money and ask the monk 😀 )

That was why, the Buddhism was the revolution ! (Rich and poor alike, all can get Nirvana).

Some people has misinterpretation of the Buddhism, as Teachings is the Teachings of how to die. 

This is a misconception.  If you see the structure of the Teachings = The observation of

the Dharma lead to the understanding of its mechanism = the relation of each element, its

Cause and the effect = Definition of the Karma.  As the mechanism is in constant flow of the

Cause = Occurrence, which never stop = hence it led to the understanding of No Perpetual

Existence = Everything keep changing = hence the Life of Man too = Death is only the End.

As everything keep changing and  Time never stops = Life has to deal with

what the one is immediately facing. = Anything is NOT there mean, it is only in the MIND.

Death fallen into the same category = Unless a Man is there in the moment of Death, Death is

not an existence = What the Man has to deal is The Current issue = TO LIVE the LIFE.

Likewise, when Fish-tin is on front —> Just deal with it.  Even think NO ELSE. = ZEN.

Other than the practice how to keep up dairy life such as the way to walk, beg a food and talk

with people, only few sample of the [special] teachings of the

Lord Buddha was scripted. One of the most well-known episode was, how Kisa Gotami was let

running the house to house looking for the seeds.

Another story was how Chuli Pantak (Shuri Bantoku in Japanese) was ordered to sweep the

grounds of the Deer Garden.

Both stories are highlighting the repeated continuous practice lead the person’s

mind to the state of Mushin hence enable to get Enlightenment.

This tradition was kept by the Buddhists, thousands of the years.

As a good sample, I wrote about the artistic practice of an artist Pok (link here) some time ago.

Please read how and why his work is the Buddhism (as he is aware and says too).

And my practice here is a part of the work to make a housing to a LED Ring Light.

To make an inner casing of the Ring Light, I found a fish tin which got the matching

size for the purpose.

To make a fish tin to be used as the inner pipe, the bottom part has to be removed = I did it

by drilling a lots of holes (about 70 holes by 1.5mm drill), then after the bottom was removed,

the jagged edge was filed and made to a smooth circle which is matching the 77mm filter ring

(by which, the Ring Light can be fixed on front of the lens).

—– technical detail would be explained in the later post.

—– Here, I’m showing how laborious the repeating work is 😀

Technically, there are many ways to cut the metal in such case = laser cutting, high-pressure

water cutting etc though, it spoil the game and unless the machine is in my hand and ask

somebody specialist to do the work, it would be very expensive = this is a poor man’s DIY.

What I’m saying is, this is what the Zen Practice is. = Zen or Buddhism is not a magic

or imaginary fantasy (hence, not thinking), but an effort to DO the job bit by bit.  Because of

Lord Buddha did teach it.  He was not a successful austere Yogi (otherwise, he could have

become a miracle Superman) but ordinary human being.  And he taught ordinary people.

Because he was not a Superman, he felt the Life is in suffering. —– He didn’t find the life is

an opportunity to perform and show-off supernatural miracles. (Hence, he was not a Divine).

To make a Life, a person has to make a Life to do something, not sitting and thinking but to DO.

To ordinary people, to DO mean, by their own mean, not in miraculous spectacular way but DO

the job next by next, bit by bit. = This is the Life.  Hence, the Teachings of

Lord Buddha was accordingly. = No miracle answer or super natural phenomena.

(That’s why a story of the Rain drop curves a rock, was in Zen story ! )

( —– I’m not implying you should drill a fish-tin. 😀 = I only showing a sample, there are

many this kind of concentration or so-called mindfulness behind the craft work or art pieces.

They are in fact, the ZEN.

Yet again, Higgs Boson and the Buddhism

Behind the any Physical Phenomenon there is always Physics

(that’s why it’s was called so :-)) and LED is one of literally very visible sample.

= When particular material was stimulated by electric current, it start to vibrate (in Atomic level)

and start to emit the Photon.  As its frequency of the vibration (which depends on which material

and resonating structure) is happen to be the frequency of a visible light, we see the colored light.

= Voilà this is a Light Emitting Diode !

(Another material gives off different frequency, such as invisible infra-red = We call them not LED

but Infra-red Emitter. — One of them called Gan Diode gives much lower frequency, in a

Microwave range which can stimulates the water molecules hence heat up them = so, they were

used in a Microwave Cooker to heat up our meal. :-))

LED will work only one Polarity hence it called Semiconductor.   Yet another material

which conductivity is not high like Silver or Copper = having high resistance (like Nickel-Chrome

Iron alloy), it convert the electric energy to an heat (and emits / radiates red to infra-red lay)

which ever the polarity = they are not Semiconductor hence “good old red-hot room heater” can

be connected to AC main (Alternative Current) = Polarities change 50~60 times in a second

(so that, heater can work on DC as well, such as the one in a car. :-))

In the Buddhist’s term, the existences of those materials and its structures, and how

they are functioning and interact each other = the system and its governing law of

physics are called Dharma.

When a stimulant such as Electric energy causes the material to vibrates and start to emit the

photon = those relation, cause and the result are called Karma and a part of the Dharma.

—– So, to say the Dharma is the fundamental existences and its system default, and

the Karma is a variable given, which causes and starts the chain of reactions.

(So that, unless you switch on a LED, it wouldn’t light up, even if the system = the materials and

the structure, such as thin layer of Gallium Nitrate on a Ruby crystal is there).

We human being often misunderstood that those technological inventions are solely “created” by the

human ingenuity though, it is utterly wrong, they are still within the Dharma and precisely following

the rules. = we are only utilizing its inherent character and maximizing the effect.

= We might have seen a back of a gang-star Al Capone in a bar, down town of Chicago for few seconds

= few second does not mean he exist only few seconds = he is still there out of our view.

The scientists in CERN had glimpse of the Boson by paying so much high price for a ticket

= 1.4Tv (1.4Tela Volt given to the coil = the higher the voltage, magnetic field created has

stronger push to the Proton Particle) acceleration and smashed them together

= resulted to see the artifact of Boson.  (yes, only the Artifact = If you believe, it’s there 🙂 )

= Does the Boson exists only in such condition ? —– A virus might have seen under an expensive

electron microscope, it isn’t necessary they only exists in a chamber of microscope = without

microscope’s image,  they still exists. 😀

If the Boson isn’t exists, all the Particle couldn’t have their Mass = No gravity to

bound them together = World would be just disintegrated and disappear 😀

Trouble is, we = who could be a witness, are also made-up by those particles = we disappear too.

= The effect to have the same Dharma inside of us.

I wouldn’t pretend to understand this level of Nuclear Physics, neither able to guess how

Peter Higgs could predict it on the paper, the existence of Higgs’ Boson which gives the mass to all

the particles should be there yet to be discovered !

—– So, we said to have all the elements of the Standard Model completed. —– ? ? ?

= Does it makes any difference over my life ? —– I don’t think so.

Even if the Standard Model is the ultimate truth, which is governing our existences, it wouldn’t make

any differences for me from a fantasy, useless delusion (sorry, scientists = you were payed to do the

research but I wasn’t = I have no reason to jump and dance with it’s discovery. 😀 )

Even Lord Buddha did ignored such details of the Dharma and left it unknowable.

= Even without having such knowledges, we know, we were still entwined with the Dharma.

= Still the matter for us is how to live the life in the every days front.

= I wouldn’t expect to see Boson in a super market and cook it for tonight’s soup.

Do you aware, the inside of an Apple, it has Boson = without it, it hadn’t fall to the ground hence

Newton couldn’t find the Gravity —– it must be true.  Believe me.
